Thai-style Marinade

Here’s a simple mix that works really well as either a marinade or a flavouring. I picked it up from one of James Martin’s recipes. You will need:-

  • 2 tablespoons Thai Fish Sauce
  • 5cm/2inch piece of fresh root ginger, peeled and finely grated
  • 2 garlic cloves, peeled and finely chopped
  • 2 tablespoons roughly chopped fresh coriander
  • the juice of half a lime
  • Salt and freshly ground pepper to season

Just mix all of the other ingredients together then season to your taste with the salt and pepper. This works really well mixed with lean pork mince and shaped into burgers or meatballs. I’ve also used it as a marinade for chunks of pork, lamb and chicken which I then threaded onto skewers and cooked as kebabs. Don’t let the smell of the Fish Sauce put you off – it tastes really good.
